D'après la doc il faudrait faire
GRUB_HIDDEN_TIMEOUT_QUIET=true
GRUB_HIDDEN_TIMEOUT=3
GRUB_TIMEOUT=0
Au démarrage, le menu de GRUB est caché pendant 3 sec "GRUB_HIDDEN_TIMEOUT=3" et ensuite le menu GRUB n'apparaît pas à cause du GRUB_TIMEOUT=0. Mais tu peux toujours faire apparaître le menu GRUB en maintenant ESC enfoncé au démarrage
Puis après la modif :
sudo update-grub
Petite précision : tu n'as qu'Ubuntu sur le PC ou bien il y a d'autres OS ?

Il me semble que la seule différence est à cette ligne:
GRUB_HIDDEN_TIMEOUT=0
Sur mon portable, cette ligne n'est pas commentée (pas de # en début de ligne).
Donc, c'est uniquement cette ligne qu'il faut modifier en supprimant le # en début de ligne.
