RESOLU : paquet grub-efi-amd64-signed n'a pas pu être installé
J'ai un maxi Pb avec une installation Ubuntu 16.04. Je sais ... En fait, l'installation de 18.04 LTS n'ayant pas marché pour la raison dite en titre, j'ai voulu réinstaller la 16.04 qui fonctionnait bien depuis deux ans. Elle ne veut plus s'installer non plus!!! pour le même motif !!!
Mon ordi est en mode EFI et j'ai un HD SSD avec rien dessus au départ. Il est formaté ainsi:
/dev/sda1 fat32 512 Mo drapeau boot, esp
/dev/sda2 ext4 224 Go (pour le système et le home)
/dev/sda3 linux-swap 8 Go (pour le swap)
Mon vrai home est sur un deuxième disque que j'ai débranché par sûreté.
De tout ce que j'ai lu sur le net, je crois comprendre que le problème vient du mode EFI et/ou du système de Boot. J'ai le choix entre les modes EFI ou EFI+Legacy. Aucun ne va bien. Et pourtant j'avais bien réussi en février dernier à mettre le 16.04. ??? Un Boot-repair n'a pas "réparé" la chose.
Dernier point: c'est un PC d'assemblage, qui va (allait) bien.

Je te prie de démarrer ton ordi sur le support Live qui te sert pour tes tentatives d'install de Ubuntu 16.04 avec la sélection "Essayer Ubuntu..." afin de faire une session live. Fais un Boot-Info depuis cette session live en suivant les indications de la partie "Cas où aucun ubuntu installé sur disque n'est opérationnel" du paragraphe 1.1 Installation. Puis tu lanceras Boot-Info suivant 1.2 Utilisation et tu donneras l'URL de ce Boot-Info dans ta réponse.

Merci et bonsoir,
l'ordi ne redémarre plus qu'en affichant la page de Boot. Le Live de 16.04 fonctionne bien (la preuve: je suis dessus. J'ai un antique autre ordi avec Linux Mint pour me sauver la mise, au cas où...)

The settings chosen by the user will not act on the boot.Je te suggère d'utiliser Super Grub2 Disk qui permet de solutionner le problème (j'en parle dans ce fil)
Télécharge le fichier super_grub2_disk_hybrid_2.02s9.iso (il est tout petit : il pèse environ 20 Mo) à cette adresse. Grave-le sur un CD-R ou un CD-RW avec la fonction "graver une image" d'un logiciel de gravure. Démarre ton ordi sur le CD Super Grub2 Disk et tu verras que tu pourras démarrer sur ton Ubuntu installé. Explication : Super Grub2 Disk est capable de lire directement dans la partition racine de ton Ubuntu installé et d'en retirer une liste de possibilités de démarrage.
EDIT : si tu parviens à démarrer en utilisant Super Grub2 Disk, tu pourras faire la réparation comme j'indique dans le fil, c'est à dire :
commande de purge de Grub :
sudo apt-get purge grub*puis réinstall de grub-efi dans la foulée par cette commande :

De nouveau à la maison. Le plus dur a été de trouver un CD-RW opérant, au creux d'un rangement. Tout s'est passé comme indiqué plus haut. Bon, ... il faut un peu chercher la bonne option dans Super Grub 2 ... mais, en moins de cinq minutes, c'est fait. "Purge de grub" et "install grub-efi" et, et,... je retrouve un ubuntu 16.04 de base. Je rappelle que mon "Home" est déconnecté pour éviter une perte éventuelle de mon disque dur de données.
Si Ubuntu 16.04 fonctionne, pourquoi la version 18.04 ne voudrait-elle pas s'installer ? Je vois ça ce soir... Je ne manquerai pas de te tenir au courant et de mettre le sujet en Resolu si ça se passe bien.

Si tu refais une tentative d'installation de la 18.04 et que tu retombes sur le problème " le paquet grub-efi-amd64-signed n'a pas pu être installé dans /target/ ", tu appliques la même méthode : démarrage avec Super Grub2 Disk, purge de Grub, réinstall de grub-efi

OK ! Nouveau problème: mon ordi ( pas magique) ne boote plus sur la clé USB au démarrage, ni pour la version 18.04, ni pour la clé avec GParted. Je pensais que, peut-être, il y a incompatibilité (d'humeur) avec cette clé créée avec le vieil ordi sous linux Mint + Unetbootin. D'où, je voulais formater la clé et refaire le USB bootable. Je vérifie les options de boot...
C'est bien USB puis Harddisk !!! 
En fait seul l'icone HD est surligné.
De plus, le démarrage se fait par l'intermédiaire d'une page sur fond rouge avec l'option Ubuntu, comme si le grub ne se lançait pas automatiquement.
Et aussi j'ai noté que dans la page de boot, il est noté que "aucun périphérique UEFI" n'est détecté. Enfin quand le démarrage se fait, les divers moyens de stockage (HD, CD/DVD, lecteurs de cartes) sont précédés du signe dièse #. C'est nouveau.
Quelle galère ! Merci de continuer à m'aider.

J'ai refait la purge de grub puis une réinstall: tout est redevenu normal = démarrage automatique.

Ma carte-mère est une MSI B75MA-E33. La doc ne m'a rien apporté de concret concernant ce changement d'ordre. Sans doute le truc tout bête que l'on ne voit pas, que l'on ne connaît pas...
Ou pas.

Pour démarrer sur une LiveUSB, tu n'as pas besoin de changer la priorité de démarrage : la LiveUSB étant connectée, il suffit que tu presses la touche F11 au démarrage de l'ordi pour faire apparaître le Boot Menu(*) et que tu sélectionnes la clé USB (la LiveUSB) dans la liste des périphériques qui sont proposés.

Je me permets de rajouter moi aussi BRAVO !
Je vais pouvoir mettre le sujet en RESOLU: j'ai l'Ubuntu 18.04 LTS tout vaillant et, bien sûr mon Home au grand complet. La migration s'est faite sans aucune anicroche, en environ 20 minutes. Pas besoin de Super Grub2. Je n'ai plus qu'à réinstaller les applications que j'utilise habituellement. Rien que du bien connu.
Le coup de la touche F11 est noté au bas de l'écran, au démarrage. 
Le rouge de la confusion m'envahit.
Un mot d'excuse pour la modération et la taille des images. J'ai bien noté.
Enfin, ma femme applaudit pour avoir retrouvé son mari moins crispé et ... son ordinateur avec son /Home à elle.
